Few in the culinary know were surprised when fish-focused chef Barton Seaver was named Esquire magazine’s “Chef of the Year” for 2009.
Chef Seaver’s since become a writer as well, with his book of easy, produce- and seafood-centered recipes, For Cod and Country, due in April, 2011.
But the site also offers links to his projects in support of saving the oceans and their bounty, which earned him status as a fellow of the National Geographic Society and Blue Ocean Institute.

Hot water is better than cold water for effective handwashing
Scientists have found that various temperatures had “no effect on transient or resident bacterial reduction.” Not only does hot water not show any benefit, but it might increase the “irritant capacity” of some soaps, causing dermatitis.
Hand sanitizers kill germs more effectively than soap
Using alcohol-based hand-hygiene products is in general not more effective than washing your hands with plain soap and water.
Frequent handwashing or use of hand sanitizers promotes healthy skin
In fact, contact dermatitis can develop from frequent and repeated use of hand hygiene products, exposure to chemicals and glove use.
Soap with triclosan is an effective antimicrobial for handwashing
A recent study compared an antibacterial soap containing triclosan with a non-antibacterial soap. The results showed that the antibacterial soap did not provide any additional benefit. In addition, concerns have been raised about the use of triclosan because of the potential development of bacterial resistance.

PepsiCo CEO Indra Nooyi said on Fox Business Channel’s American Icon program that “Doritos are not bad for you.” She added that they are “nothing more than corn mashed up, fried up in oil, and flavored in the most delectable way.”
Of course, one bag of Doritos clocks in at 1,350 calories, with 162 grams of carbs. That doesn’t sound very healthy.

The Environmental Working Group analyzed the company websites and product labels of over 170 varieties of bottled water to see if the companies disclosed information on where water came from, how the water was treated, and whether the results of tests to ensure purity were revealed.
The researchers also called the bottled water companies to see if they would willingly give information to consumers.
More than half of the bottled water products failed the transparency test. Almost 20 percent didn’t say where their water comes from, and an additional 32 percent did not disclose any information on treatment or purity of water. (more…)

The television series Mad Men, set in the early 1960s, shocks young parents today with scenes of children riding in station wagons without seat belts and putting dry cleaning bags over their heads for fun. Thank goodness we know so much more about keeping our kids healthy, we chuckle.
But as any one of the smooth advertising executives from the show would tell you, don’t underestimate the power of a well-crafted sales pitch.
Today, one of the most troubling and fastest growing threats to our children’s health is their diet. Pediatricians have seen an astounding jump for their patients in dangerous, diet-related ailments, such as cardiovascular disease, Type 2 diabetes, and asthma.
The best-documented cause is the increased consumption of fast food. It’s a trend propelled in large part by sophisticated and pervasive advertising aimed at children too young to understand the difference between marketing and facts. Don Draper would be proud. (more…)

(NaturalNews) Nearly half of the calories consumed by the average US child are empty junk food calories, according to a study conducted by researchers from the National Cancer Institute and published in the Journal of the American Dietetic Association.
Researchers evaluated the diets of children aged two to 18 using data from the National Health and Nutrition Examination Survey. They found that the average child consumes 2,200 calories per day, more than that recommended for an adult woman. An astonishing 40 percent of these calories come from added sugars (365 calories) or solid fats (433 calories). (more…)

Almost every childcare book offers the same advice about a baby’s first solid meal — start them first on rice cereal mixed with breast milk or formula. This has been received wisdom for 60 years.
But this is because in the 1950′s, baby food companies launched an advertising blitz trumpeting the benefits of white rice cereal.
But there is no scientific basis for this recommendation. None at all. And now, concerned about increasing childhood obesity, some pediatricians want to change how babies eat.
If babies are getting used to the taste of highly processed white rice and flour, it could set them up for a lifetime of bad habits.

“White rice — after processing strips away fiber, vitamins and other nutrients — is a ‘nutritional disaster’ … White rice and flour turn to sugar in the body ‘almost instantly,’ … raising blood sugar and insulin levels.”
